Dinner? Oh Right… That’s Still a Thing.
So, dinner sorta snuck up on me tonight. My day job was a whole situation — the kind of day that makes you question every life choice that led you to this point. Somewhere around 4:30, my stomach reminded me that food is, in fact, a basic human need.
Naturally, I turned to my go-to emergency plan: grilled cheese. Asked the hubs if he was cool with that gourmet option, and bless him — he had actually prepped ahead of time. (I know. I was just as shocked.)
He had grabbed one of those frozen General Tso’s chicken meals over the weekend — the “just heat it up and pretend you cooked” kind. So that’s exactly what I did. BUT I made it fancy by using my brand-new Deluxe Air Fryer & Oven — which I EARNED for FREE, thankyouverymuch (I’ll be glad to tell you how!).
I also made “homemade” white rice, which is a generous way of saying I microwaved it, forgot to watch it, and ended up with a bubbly starchy mess to clean off the turntable. Classic.
But hey — I stirred it all together. Which means dinner was technically homemade. Let’s call it Cinco de General Tso’s.
